<p style="color:#f3aca1;font-size:26px" class="has-text-color">Le Bush House</p>



<p>Nous avons eu l’opportunité de passer 5 jours dans un cadre idyllique : le lodge Bush House, de l’agence Boogie Pilgrim. Ce lieu paradisiaque est situé au bord du canal des Pangalanes et compte une quinzaine de bungalows répartis au cœur de la jungle.</p>



<h3 class="wp-block-heading">Notre arrivée</h3>



<p style="text-align:justify">Après 3 heures de bateau au départ de Tamatave, nous avons débarqué sur un ponton dominant une eau transparente avec un fin sable blanc. Les bungalows que l’on apercevait au loin étaient totalement immergés au beau milieu d&rsquo;une nature luxuriante. Notre bungalow, idéalement placé près de l’eau et entouré de végétation exotique, possédait une terrasse nous permettant de bien profiter de ce cadre magnifique.</p>



<p style="text-align:justify">La chambre était en totale communion avec la nature, sa décoration étant constituée de toute part de bois, de bambou, de pierre et d&rsquo;objets chinés. Le luxe de ce lieu était de pouvoir profiter d’une nature sauvage tout en ayant un certain confort, notamment grâce à la douche alimentée en eau constamment chauffée au feu de bois.</p>



<p>Les activités proposées étaient nombreuses : trails, visites de villages alentours, visite d’une réserve de lémuriens et enfin des kayaks étaient à disposition en libre service pour parcourir le grand canal.</p>

<p>Malgré l’isolement du Bush House, on ne profitait pas moins d’une cuisine riche et diversifiée grâce aux talents du chef Patrice.</p>

<p style="text-align:justify">Nous avons eu la chance de pouvoir suivre le chef du Bush House, Patrice, lors de la préparation quotidienne des plats typiquement malgaches. En effet, nous l’avons accompagné lors de l’élaboration des divers menus proposés chaque jour. Il a partagé avec nous, toujours avec sourire et bonne humeur, ses recettes utilisant des ingrédients que nous n&rsquo;avions pas l’habitude d’employer. Nous avons été plongés au cœur de nouvelles saveurs et de mélanges qui nous étaient jusqu’à lors inconnus. Cuisiner avec Patrice a été un beau moment de partage, où nous avons pu en apprendre un peu plus sur la cuisine malgache.</p>



<h3 class="wp-block-heading">Découverte de la cuisine</h3>



<p style="text-align:justify">Nous avons été reçus dans une grande cuisine avec un équipement simple mais où seul l’essentiel était présent. Patrice utilise des poêles rustiques et se sert d’un feu de bois à l’arrière de la cuisine pour cuire la majorité des plats, ce qui apporte un goût bien particulier aux mets et ajoute un côté authentique au lieu. Il cuisine avec des condiments différents de ceux que l’on retrouve classiquement dans les cuisines françaises (sauce soja, sauce d’huître, clous de girofle, gingembre).</p>



<p style="text-align:justify">Pour agrémenter ses plats, il se sert de la végétation environnante. En effet, nous étions ravis de cuisiner des bananes au caramel dans lequel avaient infusé des écorces de cannelle provenant de l’arbre surplombant le restaurant. Aussi, de délicieux flans ont été préparés avec de la citronnelle infusée dans du lait, récoltée à quelques pas des lodges.</p>



<h3 class="wp-block-heading">Au cœur des plats malgaches</h3>



<p style="text-align:justify">Nous avons eu l’opportunité de découvrir plusieurs plats malgaches, utilisant des aliments et techniques bien spécifiques. En effet, Patrice nous a fait découvrir sa marinade fétiche, dont il se sert pour cuisiner le poisson comme la viande.</p>

<p style="text-align:justify">Nous avons pu l’utiliser notamment lors de la préparation du <em><u><a href="https:/2019/09/23/thon-au-feu-de-bois-madagascar/">Thon au feu de bois</a></u></em> ou bien du Zébu aux légumes grillés. Les plats sont cuisinés à base de produits frais amenés par bateau de Tamatave ou alors provenant des villages alentours.</p>



<h3 class="wp-block-heading">Le pain Home Made</h3>

<p style="text-align:justify">Nous avons également eu la chance de pouvoir assister à la fabrication du pain fait maison par le Bush House. En effet, de délicieux petits pains étaient proposés lors du petit déjeuner et des repas.</p>



<p style="text-align:justify">Le cuisinier nous a donc partagé sa recette de pain préparé dans un grand récipient en aluminium qu’il a par la suite pétri à la main, laissé lever puis façonné en petites boules identiques avant de les placer dans le four au feu de bois. Les braises encore chaudes et humidifiées par un grand bol d’eau jeté au fond du four ont lentement cuit le pain, le laissant dorer et croustiller à point. Une odeur de pain chaud se laissait dégager par la porte du four assurant un pain qui n’attendait qu’à se faire déguster.</p>

<p style="text-align:justify">Après 3h de bateau, ce Bush House mérite vraiment le détour ! Nous avons été enchantés d&rsquo;avoir pu profiter d’un cadre exceptionnel entre jungle et canal avec tout le confort nécessaire et le tout accompagné d’une cuisine malgache créative et diversifiée.</p>

<h2 class="wp-block-heading">Préparation de la marinade :</h2>

<p style="text-align:justify">Placez les tranches de thon bien à plat sur un plateau.<br>Salez et poivrez chaque face.<br>Déposez quelques gouttes de sauce d&rsquo;huître et de sauce soja sur chaque tranche et massez le poisson de manière à étaler les sauces sur l&rsquo;ensemble de la tranche. Répétez l’opération sur l’autre face. Répartissez l&rsquo;ail pilé sur l’ensemble du plateau. Pressez le jus du gingembre et des citrons verts sur l&rsquo;ensemble du plat. Pour finir, versez une bonne quantité d&rsquo;huile sur l&rsquo;ensemble des tranches de thon.<br>Laissez mariner durant 4h.</p>

<h2 class="wp-block-heading">Cuisson des pommes de terre</h2>



<p style="text-align:justify">Faites cuire les pommes de terre non épluchées dans de l’eau chaude.<br>Une fois cuites, enlevez la peau et découpez en gros morceaux. Dorez les pommes de terre dans une poêle contenant de l&rsquo;huile frémissante et de l&rsquo;ail.</p>



<h2 class="wp-block-heading">Cuisson du thon :</h2>



<p>Placez les tranches de thon entre deux grilles et faites cuire au feu de bois.</p>
